Introduction
Welcome to my Brisket Rub Field Guide! As a middle school teacher and high school basketball coach in Killeen, Texas, I've spent countless weekends perfecting the art of brisket. A good rub is the foundation of a great brisket, and I'm excited to share some of my favorite recipes and techniques with you.
In this guide, you'll find a variety of rub recipes, from classic Texas-style to more adventurous flavors. Each rub has been tested and refined over many smoky sessions in my backyard. So, grab your spices, fire up the smoker, and let's get started!

Tips and Techniques
Applying a rub is just the first step in creating a delicious brisket. Here are some tips to help you get the best results:
- Dry the Brisket: Before applying the rub, make sure the brisket is dry. This helps the rub adhere better and form a nice crust.
- Generous Coating: Don't be shy with the rub. Apply it generously to all sides of the brisket.
- Resting Time: Let the brisket sit with the rub for at least an hour before smoking. This allows the flavors to penetrate the meat.
- Smoking: Maintain a consistent temperature in your smoker. For brisket, a temperature of around 225°F (107°C) is ideal.
- Patience: Brisket takes time. Plan for about 1 to 1.5 hours of smoking time per pound of meat.
